Frugal Meal Ideas...

I am always looking for ways to cut corners on meal planning and with a vegetarian in the family, it gets difficult sometimes. Not to mention having a vegetarian to please, she won't eat eggs (unless they are baked in a cake lol) So egg dishes as a meal is out... But, I do have a few little ideas to share that works for us. First off, you are going to need a slow cooker. We use that a lot. You also need a bread maker. We only have store bought bread in the freezer for emergencies. The remainder of our bread is homemade.

* We have a massive garden that we inherited and zucchini... lets just say that we have lots. Anything that we can cook and freeze to use in the winter... we plant.

1. Beans... we make them in our slow cooker and then serve them in tacos and they are really inexpensive or flour tortillas... and yes, we make those too. A little bit more work involved, but well worth it.
2. Salad... especially in the summer using seasonal veggies.
3. Soup... we like our vegetable soups creamy and all it takes is a blender.
4. Pancakes... we make those ourselves too made with buckwheat and walnuts for extra goodness.
5. Pasta... so easy and pasta sauce is made from our own grated tomatoes with a few spices tossed in.
